Easy Granola


Mix 1/2 cup each of brown sugar, oil, and honey in a saucepan. Bring to a low boil then remove from heat. Add 1 tsp. cinnamon and 2 tsp. vanilla. Pour over 7 cups of oats in a large bowl. Stir until coated. Spread in a lightly greased jelly roll pan. Bake at 375 for 10 minutes. Take out and stir then put the pan back in oven, turn the oven off, and go to bed.

This will make a basic granola -- essentially toasted and sweetened oats. You can add sliced almonds or chopped pecans to the mixture before baking if you desire. If you like more grains than simply oats then decrease the amount of oats and stir in an equal amount of wheat bran, wheat germ, or All-bran. For example, lessen the amount of oats by 1/2 cup then add 1/2 cup of wheat bran. After the granola has baked and cooled stir in raisins, dried cranberries, or dates. Store in an air tight container. Yield 7 cups.
