Peach Preservin'

I never grow tired of eating fresh peaches but come the middle of September my tastes turn to all things apple and cinnamon. There's something about late summer peaches that beg to be preserved. They're big and sort of juicy, somewhat sweet but just a little bit tart... perfect for puttin' up.

It's a nice feeling... knowing that when the cold, gray days of winter arrive I'll be able to open or give away little jars of summer sunshine that taste just like July.
