Baked chicken with basil and goat cheese

We arrived in Wilmington on a rainy, Friday evening. My friend picked us up from the airport and took us back to her darling, old house where she cooked the most wonderful dinner for us. So, this recipe is from the kitchen of my friend. It is simple and easy, but most importantly, it's oh so delicious!

Carefully rinse 4 bone-in, skin-on chicken breasts. Gently pull back the skin and lay 1 whole basil leaf on each chicken breast. Slice
8 slices of goat cheese off of a "log" of goat cheese. Lay 2 slices of cheese on each chicken breast, directly on top of the basil leaf. Gently pull the skin back over the basil, goat cheese, and chicken breast. Rub with olive oil and sprinkle with salt and pepper.

Place on a rimmed baking sheet and bake at 375 for 30-45 minutes, or until cooked through. Enjoy!
