Stealth cooking


My adventures in what I have dubbed "stealth cooking" continue. The Braun wand blender that we received as a wedding gift has become my favorite cooking companion as I puree our way to a healthier diet. Here is a list some of the dishes fortified with vegetable purees that we've enjoyed over the past few weeks:

- Breakfast casserole with carrot puree
- Banana muffins with sweet potato puree
- Annie's organic macaroni and cheese with yellow squash puree -- Boo was thrilled to get to eat boxed macaroni as a special treat. He commented, "This macaroni is so good, Mommy."
- Mashed potatoes with cauliflower puree
- Chicken and cheese quesadillas with butternut squash puree -- I'll admit Boo found the texture a little off.
- Spaghetti sauce with zucchini and sweet potato purees
- Banana-apple muffins with flax seed meal and cauliflower puree

I had a fascinating conversation with a friend from church about how beneficial plain yogurt can be for your boosting immunity. In an effort help keep us healthy I've started making smoothies using plain yogurt, fresh fruit, a bit of honey, a splash of milk and a few cubes of ice. I blend it all with my handy Braun blender and we slurp it down! Very good and very easy.

I've also started adding flax seed meal to our homemade granola and baked goods for an extra fiber boost as well as a good dose of omega-3 fatty acids. This morning we ate oatmeal with flax seed meal and dollops of unsweetened applesauce and plain yogurt, and a sprinkling of cinnamon.
