Pasta and Color

Today it was my turn to drive in the school pick-up carpool. When we got home the boys were anxious for another backyard picnic lunch, complete with the tent. They, of course, requested their typical lunch fare -- a turkey sandwich for Boo, peanut butter and jelly for Tukes, Goldfish crackers and fruit all around. While they never seem to tire of these simple lunches there are days when I feel as though I've eaten one too many sandwiches in my life.

Today I rummaged through the refrigerator and tossed together a quick and colorful pasta salad that was, to quote Tukes, "very tasty."

Easy and Colorful Pasta Salad
Cooked plain pasta, leftover is great
Chopped turkey pepperoni
Cubed or shredded cheese, I used Monterey Jack
Diced avocado
Jane's Krazy Salt
Fresh ground pepper
Olive Oil

Stir the ingredients together according to your taste preferences.
Then, step outside to spread the picnic blanket and pitch the tent.
